Creamy Mashed Potato Casserole
Great for parties....must be made 12 hrs. ahead of serving!
10 med. potatoes
6 oz. cream cheese
1 cup plain yogurt
2 tsp. onion salt
1 tsp. garlic salt
Pepper
2 tbs. butter
Grated cheddar cheese
Paprika
Boil potatoes and mash. Mix in cream cheese, yogurt, salt and pepper. Place in greased casserole. Dot with butter, cheese and paprika.
Bake at 350 for 35-45 minutes.
Summer Squash Casserole
Delicious - even if you don't like squash!
2 lbs. summer squash
1/4 cup onion
1 can Cream of Chicken soup
1/2 cup melted butter
1 cup sour cream
8 oz. pkg. Pepperidge Farm herb stuffing
Peel and slice squash and cook with sliced onions in salted water for 5-10 min. Drain well. Combine soup and sour cream. Fold in squash and onions. Combine butter and stuffing in separate bowl.
Line 2 qt. shallow casserole with 1/2 stuffing. Add squash, onion and sour cream mixture.
Bake at 350 for 25 minutes.
Corn Relish Salad
An easy and favorite Pennsylvania Dutch recipe
1/3 cup sugar
1/3 cup cider vinegar
2 tbs. salad oil
1/2 tsp. celery seed
1/4 tsp. salt
Dash pepper
1 sm. onion, sliced
1/4 cup chopped green pepper
1 can (17oz.) whole kernel corn, drained
1 can (8oz) sliced carrots, drained and cut in 1/2
(or boiled fresh carrots)
Mix sugar, vinegar, oil, celery seed, salt and pepper in lg. bowl. Add remaining ingredients. Toss lightly and cover.
Refrigerate at least 8 hrs. before serving.
Cucumber Pickles
A favorite! Easy...quick...can be frozen!
2 qts. sliced cucumbers (about 3 large)
2 sliced onions
2 tbs. salt
1 cup cider vinegar
1 1/4 cup sugar
Slice cucumbers - do not peel. Mix with onions and salt. Let stand for 2-3 hours. Drain well. Mix vinegar and sugar - stir until dissolved. Pour over cucumbers and onions.
Refrigerate and serve when cold or freeze! Will stay just as crispy and tasty!
Baked Chili Cheese Corn Casserole
4 cups corn kernels, drained
1 cup grated cheddar cheese
8 oz. pkg. cream cheese, room temperature
7 oz. can diced green chilies
2 tsp. chili powder
2 tsp. ground cumin
Preheat oven to 350
Butter 1 1/2 qt. baking dish. Mix all ingredients in lg. bowl until well combined. Place in prepared dish.
Bake until bubbling - about 30 minutes.
*NOTE: May want to use less chilies, chili powder and cumin (depending on how "hot" you like it!)
Taco Salad
A delight for summer cook-outs! Looks like it took hours to make! ;-)
1 head lettuce - broken up into small pieces
3/4 lb. hamburger - cooked and drained well.
4-5 tomatoes - cut into small chunks.
2 cups shredded cheddar cheese
1 large bottle Catalina salad dressing
1 large bag Doritos (crushed!)
Mix all except last two ingredients. Add Catalina salad dressing and Doritos just before serving.
May be eaten warm or cold.
